1 tbsp AXEL Provisions Spicy Chimichurri
1 1/2 cup cooked butternut squash
1/2-3/4 cup unsweetened almond milk
1/3 cup almond cream cheese
1 tbsp garlic
1-2 tbsp nutritional yeast
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp cayenne
1/2-1 tsp lemon juice
Sea salt to taste
1 box noodles cooked
Bunch Raw Spinach
-Food Processor or Cutting Board
-Large Baking Bowl
1) Preheat oven to 350
2) In a food processor combine all of the ingredients except the noodles, spinach & Spicy Chimichurri
3) In a large bowl combine the sauce, Spicy Chimichurri, noodles & spinach until everything was incorporated and the spinach is just a bit wilted
(Here is where I added a bit more milk as I saw fit- less milk is more like a casserole & more is like a baked mac n cheese)
4) Then top it all with nutritional yeast & paprika or Spicy Chimichurri
5) Bake for 18-22 min
6) Let cool for 5-10 min. Enjoy!
